Foody Instagram pics!

I've since decided to stop apologising about the lack of blog posts and just make you a promise that I will try to do better! Haha. I think Blogger's Block is still going around.

Quiona, roasted capsicum, portabello mushies, pine nuts and rocket salad!
As asked by xoCATox, here is another quinoa recipe!

I just sliced up my mushies and cooked them for a few minutes so they we nice and soft, and then turned the heat up to high so they go crispy. Then bang in your pinenuts, chilli and roasted capsicum. When that is all cooked and hot, toss in your (warmed up in microwave) quinoa and rocket, mix it around and Bob's your uncle. Less than 10 minutes.
It was so delicious, and oh so healthy! Don't forget the chilli :)

The best thing I have found is having cooked quinoa and brown rice in the fridge, it makes it so easy to whip up quick healthy meals!

Roasted veggies!

Sweet potato with garlic, capsicum with red wine vinegar, zucchini with oregano and eggplant with homemade chilli salt to be roasted! Get in my belleh.

Slow braised mushies, my Sunday winter ritual.
I do love a good braise. What is better on a cold Sunday arvo?

Happy Sunday lunch!

We had this wonderful dish for lunch yesterday, after the horribleness that was the weather on Saturday, the sun was a-shinin' for us... so it was BBQ time!
We had a rocket and basil salad with avocado and mixed tomatoes, and a capsicum that was roasted on the weber.
The salmon was marinated in balsamic vinegar, mustard, chilli, garlic and honey.
Try it.
I dare you.
You won't look back.
And then a parsley, garlic, EVOO and chilli grilled portobello mushroom and life was complete.
With a glass of white of course. I think drinking red with fish is criminal.

I love food blogs with real pictures of what you've made yourself. Luckily for me, Instagram makes everything look even more pretty! Haha

I hope you guys all had a wonderful weekend!

xx
